Chorizo pancakes

If you want an easy recipe for nibbles at a drink party; or something for a picnic in the park; or something different for a quick brunch, do make these lovely chorizo pancakes! This is just the basic recipe – you can add chopped spring onions, grilled red pepper or sundried tomatoes to the batter to make the pancakes even more yummy. You can use gluten-free flour or dairy-free milk if you (or your guests) have food intolerance issues

Ingredients
  

  • 50 g cooking chorizo
  • 2 eggs
  • 1 cup self-raising flour
  • About 1 cup milk
  • 2 handful of spinach or a small bunch of basil

Method
 

  1. Mix the eggs, flour spinach/basil with enough milk to get a thick but pourable mixture (like custard). Rest.
  2. Chop the chorizo into tiny cubes. Gently fry these in a non-stick frying pan until the fat has released and the chorizo is cooked.
  3. Add the chorizo to the batter, combine well.
  4. Put a few ladleful of batter in the pan near to each other but allowing enough space for them to spread out into circular shapes. After a couple minutes the surface should be almost solid. Flip them over and cook for a minute or so, until they are golden.
  5. Serve warm or at room temperature.
