Cinnamon-maple baked chicken and sweet potato

During harvest and the winter months I love the smell of cinnamon all over the house. This super easy cinnamon - maple baked chicken and sweet potato dish not only provides the aroma but it’s very tasty too! Perfect for an easy midweek supper or laid-back weekend meal. Serve a crispy green salad or steamed greens on the side.

Ingredients
  

  • 8 pieces of chicken thighs and drumsticks
  • 2 large sweet potatoes
  • 2 red onions
  • 2 tsp cinnamon powder
  • 2 Tbsp olive oil
  • Juice of 1 lemon
  • 2 Tbsp maple syrup

Method
 

  1. Heat the oven to 200°C.
  2. Arrange the chicken and vegetable pieces in a large baking tray. Season with salt & pepper, dust with the cinnamon, drizzle with the oil and lemon juice. Put the lemon halves in the tray.
  3. Put the tray in the oven and turn the heat down to 180°C. Cook for 35 minutes until light brow , turning them once.
  4. Take the tray out and brush all vegetable and chicken pieces with the maple syrup.
  5. Cook for a further 15 minutes or so, until golden brown.
  6. Serve warm with the cooking juices poured over them.
