Cocoa and oat muffins

These cocoa and oat muffins are not only yummy but pretty healthy too! They are a perfect snack with coffee and tea or can be an afternoon treat for children.

Ingredients
  

  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • 1 cup coarsely chopped walnut
  • 1 tsp baking powder
  • ⅓ cup cocoa powder
  • ½ cup light muscovado sugar
  • ½ tsp salt
  • 1 cup oaty milk
  • ⅓ cup melted dairy-free margarine or vegetable oil
  • 1 large ripe banana
  • 2 eggs
  • 1 tsp vanilla essence

Method
 

  1. Preheat the oven to 190°C. Line a muffin tin with paper cases.
  2. Mix the flour with the oats, baking powder, salt, sugar, cocoa powder.
  3. In another bowl beat the eggs lightly, then add the milk, oil and vanilla.
  4. Mash the bananas and add it to the egg mixture.
  5. Fold the wet mixture to the dry one, stir well, then fold in the walnut.
  6. Fill the muffin cases two thirds full with 2-3 spoonful of the batter.
  7. Bake for 20-25 minutes until brown.
  8. Cool the muffins on a wire rack.
