Preheat the oven to 190°C and line a baking tray with parchment paper.
In a bowl, mix the desiccated coconut, ground almonds, coconut sugar, lime juice and coconut cream to form a soft, spreadable filling. Add a little more coconut cream if needed.
Unroll the puff pastry onto a clean, flat surface and spread the filling evenly over the pastry.
Roll the pastry up tightly into a long log, starting from one of the long sides.
Cut the roll into slices about 2 cm thick.
Place the slices on the prepared baking tray with the cut side facing upwards. If you like, sprinkle a little extra coconut sugar on top for a slightly caramelised finish.
Bake for about 12 minutes, until golden and crisp.
Alternatively, bake them in an air fryer for about 10 minutes.
Allow the rolls to cool slightly before serving.
