Coconut and Almond Puff Pastry Rolls

These coconut and almond puff pastry rolls are quick, simple and lightly sweet — perfect for breakfast, brunch or afternoon tea. Made with ready-rolled puff pastry, they take very little time to prepare and bake into crisp, golden spirals with a soft coconut filling. The combination of coconut, almonds and a touch of lime gives them a fresh flavour that isn’t overly sweet. They’re ideal when you want a homemade treat without much effort. This recipe can easily be made vegan by using plant-based puff pastry, and gluten-free puff pastry works just as well.

Ingredients
  

  • 1 sheet ready-rolled puff pastry
  • 4 Tbsp desiccated coconut
  • 3 Tbsp coconut cream approx.
  • 3 Tbsp ground almonds
  • 2 Tbsp coconut sugar
  • Juice of ½ lime

Method
 

  1. Preheat the oven to 190°C and line a baking tray with parchment paper.
  2. In a bowl, mix the desiccated coconut, ground almonds, coconut sugar, lime juice and coconut cream to form a soft, spreadable filling. Add a little more coconut cream if needed.
  3. Unroll the puff pastry onto a clean, flat surface and spread the filling evenly over the pastry.
  4. Roll the pastry up tightly into a long log, starting from one of the long sides.
  5. Cut the roll into slices about 2 cm thick.
  6. Place the slices on the prepared baking tray with the cut side facing upwards. If you like, sprinkle a little extra coconut sugar on top for a slightly caramelised finish.
  7. Bake for about 12 minutes, until golden and crisp.
  8. Alternatively, bake them in an air fryer for about 10 minutes.
  9. Allow the rolls to cool slightly before serving.
