Coconut and jaggery laddu

Coconut and Jaggery laddu is a desert and this recipe is from southern Indian state of Andhra Pradesh. This laddu can be made with sugar or jaggery. I personally prefer the Jaggery ones, as they are healthier and tastier with a wonderful aroma.

Ingredients
  

  • 1.5 cups grated coconut
  • ¾ cup grated jaggery
  • ¼ tsp green cardamom powder
  • 2 tsp clarified butter or ghee
  • ¼ cup water

Method
 

  1. Take a pan and add jaggery and water to it. Melt it on a low heat.
  2. Take a heavy bottom pan and add ghee and heat it. Add the grated coconut and fry evenly for 2 to 3 minutes.
  3. Pass the jaggery syrup through a filter to discard impurities.
  4. Add cardamom powder to the jaggery and mix well.
  5. Add the jaggery syrup to the coconut and cook till the moisture evaporates and you begin to see strings in the mixture. This could take about 3 to 4 minutes after you add the jaggery syrup.
  6. Set the mixture aside to cool.
  7. Once cool, grease your palms and take small portions of the mix and make balls.
  8. These are to be consumed within a week.
