Put the flour, eggs, coconut milk, baking powder and oil in a blender and whiz until you get a thick but pourable batter. Add more milk if it’s too thick.
Mix in the desiccated coconut, then rest the batter for 10 minutes.
Heat the waffle maker. When it’s hot, add a ladleful of the batter and seal. Cook the waffle until golden and crispy, following the machine’s instruction. It should take about 3-5 minutes, depending on your waffle maker.
Transfer the waffle to a plate, then make more waffles from the batter (you should get another 2 or 3 depending on the size of your waffle maker).
Serve the waffles with desiccated coconut and a drizzle of lime juice.
