Roughly chop up all the vegetables.
Heat up the oil over a medium heat in the pressure cooker. Put in the leek and stir gently until it softens.
Add the potatoes and carrots, then stir in the ground coriander before adding the stock. Season to taste.
Pop on the lid and bring up to pressure (as per manufacturer's instructions) and cook for 5 minutes (high pressure) or 7 (medium).
Allow to cool by itself then remove the lid and add most of the fresh coriander, keeping back some for garnish. Use a hand blender to create a nice smooth creamy texture and serve it up!
