Couscous salad with dried fruits

This couscous salad with dried fruits and almond can be served warm as a side dish with grilled lamb or a tagine. Alternatively serve it cold at parties, barbecues, picnics or part of a buffet menu.

Ingredients
  

  • 1 cup vegetable stock
  • 2 Tbsp soft butter or dairy-free margarine
  • ½ cup mixed dried fruits chopped
  • 1 cup dry couscous small grain
  • 1 tsp ground cinnamon
  • 3 Tbsp almond flakes

Method
 

  1. Bring the stock to the boil. Add the dried fruits and the butter. Turn the heat off and add the couscous. Cover the pan with a lid and let it rest for 5-8 minutes.
  2. In the meantime dry-fry the almonds until golden brown.
  3. Loosen the couscous with a fork, add the cinnamon and almonds.
  4. Serve it warm or at room temperature.
