Cranberry and pork stuffing balls

These cranberry and pork balls are made with sausage meat and bacon. They look fantastic around roast turkey or they can be served as an appetizer or as party nibbles! They are very easy to make and are absolutely yummy!

Ingredients
  

  • 450 g sausage meat or sausages
  • 1 bunch of spring onion or 3 shallots chopped
  • 75 g dried cranberries
  • 2-3 springs of rosemary leaves or a 5-6 sage leaves chopped
  • 150 g breadcrumbs
  • 1 egg
  • about 16 rashers of streaky bacon cut in half

Method
 

  1. Preheat the oven to 180°C.
  2. Remove the skins from the sausage meat or sausages, then put the meat into a bowl.
  3. Add all the other ingredients except the bacon.
  4. Season with salt and pepper, then combine it together using your hands, Form 16 balls from the mixture and wrap each one with 2 pieces of streaky bacon across each other and overlapping. Place them on a baking sheet with the overlap downwards and cook for 30 minutes in the oven (whilst your turkey is resting).
