Cranberry sauce with port

If you’re after an interesting cranberry sauce to serve with roast turkey and duck try this one! This cranberry sauce with port  goes well  with cold meat and cheese too, so you won’t have any problem using it up! You can make this ahead of the festivities and any leftover can be frozen and kept in the freezer ( Valentine’s day is the ideal time to use it up)!

Ingredients
  

  • 250 g cranberries
  • 50 ml port
  • 1 tsp grated fresh ginger
  • Grated zest and juice of 1 orange
  • 1 cinnamon stick
  • 50 g muscovado sugar
  • Squeeze of lemon juice

Method
 

  1. Put all ingredients into a heavy-based pan and bring to the boil. Gently simmer for about 10 minutes until the cranberries begin to burst and the sauce thickens.
  2. Taste and adjust it to your liking. Add more sugar, spices or lemon juice, if needed, then let it cool completely before serving or transferring it into a sterilised jar.
