Creamy Dolcelatte spaghetti

I love cheese pasta - it’s my ultimate comfort food! Given that it takes only 10 minutes to make, this creamy Dolcelatte spaghetti is my perfect lunch on busy/lazy days.  I serve it with a rocket salad et voilà! I use gluten-free spaghetti but you can make it with any kind of pasta.

Ingredients
  

  • 50 g Dolcelatte
  • 2-3 Tbsp double cream or crème fraîche
  • 1 handful of parsley chopped
  • 1 Tbsp toasted pine nuts
  • ½ tsp grated lemon zest
  • 100 g spaghetti can be gluten-free

Method
 

  1. Cook the pasta according to the packet instructions.
  2. Meanwhile remove the rim of the cheese, and crumble the cheese into a small saucepan. Add the crème fraîche/cream, lemon zest, then gently heat it until the cheese melts and the sauce starts to bubble.
  3. When the pasta is ready, using a tong, move it into the cheese sauce and toss well.
  4. Mix in the parsley and serve with the pine nuts scattered on top.
  5. Season with plenty of ground pepper.
  6. Serve warm.
