Dahi bhindi

Ingredients
  

  • 2 cups chopped okra
  • 1 cup low fat curd
  • 2 tsp coriander powder
  • 2 tsp chilli powder
  • 1 pinch turmeric powder
  • 1 tsp chickpea powder
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp fennel seeds
  • 1/8 tsp asafetida
  • 5 to 7 curry leaves
  • 1 tsp oil
  • Salt to taste
  • Chopped coriander leaves for garnishing

Method
 

  1. Take a bowl and combine the curd, coriander powder, chilli powder, chickpea powder and salt with 2 Tbsp of water and keep aside.
  2. Heat oil in a deep bottomed pan then add cumin seeds, mustard seeds, fennel seeds, asafetida and curry leaves.
  3. When the seeds crackle, add chopped okra and cover with a lid. Simmer for 3 to 4 minutes.
  4. When the okra becomes soft add the curd mixture and cook for another 5 minutes.
  5. Remove from the flame and garnish with coriander leaves.
  6. Serve hot with rotis or steamed rice.
