Dairy-free chocolate waffles

Waffles bought in the stores always have milk in them so if you have dairy issues it’s worth investing in a waffle maker. Home-made waffles are more healthy anyway, and really easy to make. These Dairy-free chocolate waffles are made with plant-based milk (I like using oat or almond milk, but coconut, soy and hazelnut milk would work too). Serve the waffles with your favourite sauce or fruits!

Ingredients
  

  • 150 g self-raising flour
  • 1 tsp baking powder
  • ½ tsp bicarbonate of soda
  • 2 -3 Tbsp muscovado sugar
  • 2 medium eggs
  • 2 Tbsp cocoa powder
  • 250 ml oat or almond milk
  • 2 Tbsp vegetable oil

Method
 

  1. Mix the dry ingredients in a large bowl. Beat in the eggs, then then add the milk gradually, whisking until you get a thick, smooth batter. Add the oil and stir until combined.
  2. Heat the waffle machine. Once it’s hot, spoon in the batter and seal. Follow the machine instructions to cook the waffles, one by one. You should get about 4 waffles, depending on your machine.
  3. Serve, dusted with powder sugar, chocolate sauce, compote etc (see above).
