In a large bowl, cream together the margarine and the sugar, until light and fluffy. Add the golden syrup and egg, then combine.
Sift in the flour, bicarbonate of soda and spices. Mix together, then using your hands, knead until you get a stiff dough.
If it’s too sticky put it in the fridge for 30minutes.
Pre-heat your oven to 160° C and line a couple of baking sheets with parchment paper.
Roll out the dough to 5mm thickness.
Using gingerbread man and Christmas cutters, cut the cookies from the dough and place them onto the baking sheets, leaving enough space between them to expand.
Knead together any off-cuts before re-rolling the dough and make more cookies.
Bake the biscuits in the oven for 10-15 minutes, depending on their size. Be careful not to overbake your biscuits - otherwise they will be too hard to eat!
When they are golden, remove them from the oven.
Let them cool, then decorate them to your liking or just dust them with icing sugar.
