Drumstick curry

This south Indian curry is simple and easy to make. Drumsticks are pods of the Moringa plant and are considered to be a rich source of highly digestive proteins, calcium, vitamin c and iron. Drumstick curry is delicious and can be served as side dish with steamed rice or even roti.

Ingredients
  

  • 5 drumsticks cut into 3” lengthwise pieces
  • 2 Tbsp oil
  • 2 medium size onions finely chopped
  • 1 chopped green chilli
  • ¼ tsp turmeric powder
  • 1 tsp red chilli powder
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • 1 spring curry leaves
  • Salt to taste

Method
 

  1. Heat oil in a deep bottomed pan on a medium flame. Add mustard seeds, allow them to splutter. Add cumin seeds and curry leaves sauté for a minute.
  2. Add onions and green chillies and sauté them for 5 minutes.
  3. Once the onions are cooked, add drumstick pieces, turmeric powder, red chilli powder and salt.
  4. Add one cup of water and cover with a lid and allow the drumsticks to cook under a low flame.
  5. Once the drumsticks are cooked and the gravy becomes thick, remove from the flame and transfer to serving bowl.
