Easy cinnamon cruffins

Cruffin is a fusion of a croissant and  muffin. If you like cinnamon whirls try out these easy cinnamon cruffins which are super easy to make using ready-rolled puff pastry. If you use dairy-free products (pastry and spread) then you’ll get  a yummy vegan treat!

Ingredients
  

  • 1 sheet ready-rolled puff pastry or croissant pastry
  • 50 g butter or dairy free spread melted
  • 6 Tbsp brown muscovado sugar
  • 2 Tbsps. cinnamon powder

Method
 

  1. Heat the oven to 180°C. Lightly grease 6 holes in a muffin tin with butter or dairy-free spread. Or prepare 6 silicon baskets.
  2. Combine the sugar and cinnamon in a small bowl.
  3. Unroll the pastry and brush it with the melted butter. Scatter two-thirds of the cinnamon sugar over it, then roll it tightly into a long sausage shape (along its long side). Cut this into 3 equal sized logs.
  4. Cut each log, lengthwise, into 2 pieces. You should get 6 thin pieces, exposing the inner layers on one side.
  5. Take one piece and form a knot - preferably showing the layered side outwards. Repeat with the remaining pieces.
  6. Place each piece in the greased tin or silicon baskets.
  7. Bake for 20-25 minutes, in the middle of the oven, until golden.
  8. Take the tin out of the oven, and using a spoon, remove the cruffins onto a plate.
  9. Brush them with any remaining butter and roll them in the cinnamon sugar, while they’re still warm.
  10. Let them cool before serving.
