Easy gluten-free waffles

I think it’s really worth getting a waffle maker! I now make waffles every weekend for breakfast or snacks  and not only do I save money but I can control what goes into the batter. These easy dairy-free and gluten-free waffles can be sweet or savoury - if you want to serve them with smoked salmon, Parma ham orpâté,reduce the sugar or substitute it with just half a teaspoon of Stevia. Serve them warm or at room temperature with your favourite topping (fruity sauce, maple syrup or ice-cream/custard) or as snacks & party nibbles. This time I served them with banana slices and maple syrup.

Ingredients
  

  • 1 cup gluten-free flour blend
  • 1 Tbsp sugar
  • 2 tsp baking powder gluten-free
  • ¼ tsp salt
  • ¼ tsp Cinnamon optional
  • ½ teaspoon gluten-free vanilla extract
  • 1 egg room temperature
  • ¾ cup milk plant-based, if needed
  • 1 Tbsp oil
  • ½ tsp vanilla extract

Method
 

  1. Whisk the ingredients together in a large mixing bowl and rest for 10 minutes.
  2. Heat the waffle maker. Once it’s hot, spoon in the batter and seal. Follow the machine instructions to cook the waffles - it should take 3-5 minutes per waffle, depending on your machine. The waffle should be golden brown, crisp on the outside, soft inside.
  3. Remove the waffle to a plate, using tongs or a silicon palette knife.
  4. Make 2-3 more waffles (depending on the size of your machine).
  5. Serve the waffles with your chosen toppings.
