Easy vanilla waffles

Waffles are so easy to make for breakfast or brunch and this basic recipe can be flavoured with extra ingredients such as chocolate chips, dried fruits, jam or you can serve it with your favorite toppings such as custard, chocolate sauce, fruit compote or just vanilla yogurt. You can use plant-based dairy alternatives for this Easy vanilla waffles recipe - I used Alpro vanilla yogurt and soya milk.

Ingredients
  

  • 1 cup flour
  • 1 tsp baking powder
  • 1 Tbsp vanilla sugar optional
  • 2 medium eggs
  • ½ cup milk plant-based, if needed
  • ½ cup vanilla yogurt plant-based, if needed
  • 2 Tbsp oil
  • To serve: vanilla yogurt plant-based, if needed

Method
 

  1. Mix the dry ingredients in a large bowl.
  2. Using a wooden spoon or electric mixer, beat in the eggs, then then add the milk gradually, whisking until you get a thick batter. Add the yoghurt and oil and mix until smooth.
  3. Add more milk if it’s too thick (the batter should be pourable, but not as thin as pancake batter).
  4. Heat the waffle machine. Once it’s hot, spoon in the batter and seal. Follow the machine instructions to cook the waffles - they should be golden brown and crispy on the outside, soft inside.
  5. Serve with vanilla yogurt and toppings of your choice.
