Elderflower, coconut and banana oat cookies

These elderflower, coconut and banana oat cookies are a variation on my healthyoat and banana cookiesbut they are also gluten-free, dairy-free, egg-free and fat-free. There is some sugar in these, which comes from home-made,reduced-sugar elderflower cordial. So these cookies are still more healthy than most oat-based cereal bars you buy in the shops, and yet super easy to make.

Ingredients
  

  • 2 bananas
  • 1 cup rolled oats
  • 2 tbsp elderflower cordial
  • 2 tbsp desiccated coconut
  • Zest of 1 lemon
  • For the glaze:
  • 2 tbsp elderflower cordial
  • Juice of 1 lemon

Method
 

  1. Mash the bananas with a fork or blend them in a blender.
  2. Add enough oats and the other ingredients to create a malleable dough. Let it rest until the oven warms up.
  3. Turn the oven on to 180°C. Line a baking tray with parchment paper.
  4. Make equal sized balls (8-10) from the mixture and flatten these slightly between your palms. Put these on the baking tray and bake for about 15-20 minutes until the edge turns golden brown.
  5. Meanwhile, mix the cordial with the lemon juice in a pan and heat it up. Let it bubble until it gets syrupy.
  6. When the cookies are done, transfer them to a wire rack and brush with the glaze.
  7. Let them cool before serving.
