Elderflower pork fillets

During elderflower season it’s worth making cordial or thick syrup from it because you can use these syrups for so many summer recipes – cakes, marinades, dressings, cocktails and so on. These elderflower pork fillets taste special because of myhomemade elderflower syrup( which keeps in the  fridge for a whole year btw!)

Ingredients
  

  • 4 slices pork fillet
  • 1 lemon juiced
  • 1 Tbsp Soy sauce
  • 2 sprigs of thyme leaves only
  • 2 Tbsp elderflower syrup

Method
 

  1. Put the pork fillet in a hallow dish, next to each other
  2. Mix the lemon juice, soy sauce, elderflower syrup and thyme leaves, then brush the meat with this mixture.
  3. Turn them over and brush the other side too, then drizzle any remaining glaze over them.
  4. Marinate for minimum 30 minutes, or longer, if time allows.
  5. Heat your BBQ, griddle pan or frying pan.
  6. Season the pork with salt and pepper, then grill/fry the pork for 3-5 minutes on each side, brushing them with the marinade a couple of times.
  7. Serve warm with side dishes of your choice.
