Feta omelette

This easy feta omelette is more like a frittata, as it’s quite thick. So it can be served as a main dish for breakfast, brunch and lunch with a green salad on the side;  or you can cut it up into little squares to be served as nibbles at a party, picnic etc

Ingredients
  

  • 4 eggs
  • 1 medium onion
  • 250 g feta cheese
  • Salt pepper, olive oil
  • Fresh herbs such as chives, marjoram, oregano

Method
 

  1. Thinly slice the onion.
  2. Heat a little oil in a non-stick frying pan and cook the onion until soft.
  3. Whisk the eggs in a bowl, then add the fried onions. Crumble the feta over it. Season with salt and pepper. Combine.
  4. Turn on the grill in the oven.
  5. Heat some more oil in the pan and pour in the egg mixture, spreading it out evenly. Turn down the heat and cook until the top sets.
  6. Put the pan under the grill for 2/3 minutes, until the top get golden brown. Alternatively, flip the omelette over and cook for a couple of minutes.
  7. Transfer it a plate and sprinkle with chopped herbs.
  8. Serve warm or at room temperature.
