Preheat the oven to 180C. Line a baking tray with parchment paper.
Peel, core then dice the apple into very small pieces (or grate it with a coarse cheese-grater).
Mix the mincemeat and apple. Add a spoonful of brandy if the mincemeat is not boozy.
Lay one sheet of filo pastry on top of a cold work surface and brush it with the melted butter.
Lay another sheet on top, then cut this into four equal sized rectangles.
Spoon some mincemeat mixture along one side of each square, then fold in the ends and roll them up tightly. Place them on the baking tray.
Repeat with the remaining 2 sheets of filo.
Bake for 8-10 minutes or until golden.
Let them cool a bit, then dust them the cinnamon mixed with icing sugar.
