Flourless banana pancakes

When I read somewhere that you can make pancakes just with two ingredients - banana and egg, I was a bit sceptical. I decided to try it out anyway. These flourless banana pancakes are actually quite nice, particularly if you add some cinnamon, cocoa or vanilla extract to the batter.  They are gluten-free, dairy-free and sugar-free too! Serve them for breakfast with maple syrup, fruit compote or fresh fruits. I also like snacking on them during the day! Yummy!

Ingredients
  

  • 2 medium ripe bananas
  • 2 eggs
  • ¼ tsp baking powder
  • Optional: ½ tsp vanilla extract or ½ tsp ground cinnamon

Method
 

  1. Whisk the eggs in a small bowl.
  2. In another bowl, lightly mash the bananas with a fork. Add the egg, baking powder, vanilla or cinnamon, then combine.
  3. Heat a little oil in a heavy-based frying pan or pancake pan over medium heat. Add approx. 2 Tbsps of the batter and make a circular shape with the spoon and tilting the pan. When the top looks set ( after about a minute or so) flip it over and cook for another minute. Try to make about 3-4 pancakes at a time. The batter should be enough to make about 8-10 pancakes (in two batches).
  4. Serve warm, topped with maple syrup, yogurt and/or fruit compote (if you like).
