Frankfurters with root vegetable mash

If you want your kids to eat more veggies, this recipe will help you. I normally use two main vegetables such as sweet potatoes and carrot ( and hide some parsnip or swede in there  which they don’t even notice). I make this dish regularly for the family as its’ quick and easy -  and  most importantly everybody loves it!

Ingredients
  

  • 1 kg of various root vegetables such as parsnip, carrot, swede, turnip, potato, sweet potato
  • 1 stock cube
  • 1 teaspoon thyme leaves
  • ½ head cabbage
  • 1 teaspoon olive oil
  • 10 Frankfurters
  • ½ red onion chopped
  • Dairy-free spread or soft butter
  • Ground pepper

Method
 

  1. Peel and chop the vegetables, then put them in a pan of lightly salted water. Bring to the boil and simmer for about 15 minutes, until they are tender.
  2. Shred or thinly slice the cabbage and add to the vegetables for the last 2 minutes of cooking.
  3. Drain, then put them back in the pan and lightly mash them with a fork or potato masher. Season with salt and pepper and mix in some dairy-free spread or butter. Keep warm.
  4. Chop the sausages into 2 cm pieces, then fry them in the oil with onion for 2-3 minutes. Add the thyme, stir for a few seconds, then add the mashed vegetables.
  5. Cook for a couple of minutes, stirring occasionally.
  6. Serve warm.
