Preheat the oven to 180°C or set the grill to medium.
First check the bread for any mould and smell it too. If it’s ok and it doesn’t smell bad, then you can make croutons from it.
Cut the bread into cubes or rustic chunks and toss with the herbs, garlic and about 2 Tbsp olive oil. Scatter them into a baking tray and season with salt & pepper. You can add some chilli flakes too.
Bake or grill for about 5 minutes until golden and crispy.
Let the croutons cool, then transfer them to a jar. Seal the jar and store it in a cool, dry place.
