Gluten-free and dairy-free cherry clafoutis

Clafoutis a traditional French dessert, made with black cherries and flan-like batter. This gluten-free and dairy-free cherryclafoutistastes just as good as the original version, as it’s made with ground almonds and almond milk (providing the nutty flavour). Serve it lukewarm, with ice-cream, or let it cool and cut it into squares.

Ingredients
  

  • 2 cups pitted fresh cherries
  • 3 large eggs
  • 1 cup almond milk
  • ½ cup sugar
  • ½ cup ground almond
  • 1 cup gluten-free flour mixture
  • 1 Tbsp cornflour
  • 2 Tbsp melted dairy-free spread
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • Pinch of salt
  • Handful of almond flakes
  • To serve: icing sugar

Method
 

  1. Preheat oven to 180°C.
  2. Grease a baking dish with margarine.
  3. In a blender, combine the eggs, almond milk, sugar, the flours, ground almond, margarine, vanilla extract, cinnamon and salt. Blend until you get a smooth batter – the consistence should be similar to a thick pancake batter.
  4. Arrange cherries in the greased baking dish, then pour the batter over them.
  5. Bake for about 25-30 minutes or until the top is golden. You can scatter some almond flakes on the top after 15 minutes of baking.
  6. Cool for 10 minutes before slicing it into wedges or squares.
  7. Dust with icing sugar just before serving.
