Gluten-free coconut and lime pancakes

Ingredients
  

  • ½ cup gluten-free self-raising
  • ½ cup coconut flour
  • ½ cup desiccated coconut
  • 2 Tbsp coconut sugar or more to taste
  • 1 egg
  • Juice and grated zest of 1 lime
  • cup fresh coconut milk approx.
  • 1 tsp rapeseed oil
  • Drop of oil for cooking
  • To serve: desiccated coconut lime wedges

Method
 

  1. Mix the flours and desiccated coconut, then add the egg, lime juice & zest and milk. Blend or mix until you get a thick but pourable mixture. Add the oil and more milk, if needed.
  2. Lightly grease a pancake pan.
  3. When the pan is hot, drop several (small) ladlefuls of batter, letting them spread out into circular shapes. Cook for a couple of minutes until the surface is no longer runny. Carefully flip them over and cook for another minute or so, until light brown.
  4. Transfer them to a plate and make more pancakes with the remaining batter.
  5. Serve warm with desiccated coconut scattered over the top - and drizzled with lime juice.
