Gluten-free, dairy-free toad in the hole

Toad in The Hole can easily be made with gluten-free flour and dairy-free milk. This recipe is super easy! If you add baking powder to the batter, it will rise and cover the sausages. If you prefer the traditional version, leave the baking powder out. Serve the dish  with salad and gravy.

Ingredients
  

  • 8 chipolatas
  • 1 onion
  • 100 g gluten-free flour
  • 2 eggs
  • 250 ml oat or almond milk
  • 1 tsp baking powder optional
  • Pinch of salt
  • 1 tsp dried oregano
  • Olive oil
  • Splash of soda water optional

Method
 

  1. In a frying pan heat some oil and brown the sausages. Set aside.
  2. Preheat the oven to 200°C.
  3. In a medium baking dish add some oil (about 3mm depth). Place the dish in the oven to get hot.
  4. Meanwhile, combine the flour, eggs, milk, salt and pepper and whisk until you get a smooth cream similar to pancake batter. (Add some soda water, if the batter is too thick.) Set aside.
  5. Peel then cut the onion into thin wedges.
  6. Take the dish out of the oven and carefully place the sausages and onion wedges in the oil, then pour over the batter. Scatter the oregano on top.
  7. Bake in the oven for 35 to 40 minutes, or until golden brown.
  8. Serve warm.
