Unroll the pastry and cut it into 10 cm squares using a pizza cutter.
Then make a 4cm diagonal cut from each corner towards the centre of each square.
Place a spoonful of mincemeat in the middle, then fold the left corner of each of the cut corners into the middle of the filling and press them firmly.
Brush the pinwheels with egg-wash, if you like a shiny finish and you're not vegan. (You can scatter some almond flakes on top if you like)
Put them on a lined baking tray and rest for 10 minutes in the fridge.
Heat the oven to 180C, then bake the pinwheels for 10-15 minutes until golden.
Transfer them to a cooling rack.
When lukewarm, dust them with icing sugar and serve.
