Gluten-free, vegan mincemeat pinwheels

Mincemeat can be used for many lovely treats, not just for mince pies. It’s best to use good quality mincemeat - actually, it’s so easy to make your own (see mincemeat recipes). I made these Gluten-free, vegan mincemeat pinwheels with sour cherry and pear mincemeat -  they were super yummy and everyone with milk & gluten allergies could enjoy them!

Ingredients
  

  • 1 gluten-free puff ready-rolled pastry sheet
  • 1 jar good quality mincemeat
  • 2 Tbsp cherry or sour cherry jam
  • Icing sugar

Method
 

  1. Pre-heat oven to 190C. Line a baking tray with parchment paper.
  2. Unroll the pastry sheet. Mix the jam with the mincemeat, then spread evenly over the pastry.
  3. Roll up from the longest side - similarly to a swiss roll. Chill in the fridge for 20 minutes, if time allows.
  4. Cut the roll into 1.5 cm slices and place them on the tray.
  5. Bake for bout 10-12 minutes until golden.
  6. Transfer them to a wire-rack to cool.When cooled, dust with a icing sugar.
