Using a vegetable peeler, cut the courgette into thin ribbons. Deseed, then thinly slice the chilli.
Cook the gnocchi following the pack instructions.
Meanwhile, heat the oil in a frying pan. Cook the courgette and chilli for 3-5 minutes until soft. Add the spring onions, garlic and lemon zest, then cook for another minutes or so.
Add the mascarpone, a squeeze of lemon juice and some of the gnocchi’s cooking water. Mix until you get a silky sauce.
Drain gnocchi and add to the sauce. Toss until they get well coated with the sauce.
Season with salt and pepper to your liking.
Serve with freshly grated Parmesan, ground peppercorn and a few basil leaves scattered on the top.
