Preheat the oven to 180°C.
Separate the egg into two small bowls.
Wash and wipe the fruits then chop them into 1 cm pieces. Mix the cinnamon, flour, lemon zest and sugar, then add to the fruits. Combine well.
Unpack and roll out the pastry, then cut it into 10-12 cm squares.
Make an imaginary line between two opposite corners across the squares - you're going to fold them into a triangle shape along this line.
Whip the egg white slightly, then brush the edges of the squares with this.
Add 1-2 spoonful of the sugared fruit mixture onto one side of your imaginary line. Fold the pastry in half to create the triangle shape, and press the edges together.
Place the turnovers onto a lined baking tray and brush with the beaten egg yolk.
Bake for about 20 minutes until golden.
Let them cool on a wire rack.
