Ingredients

  • 1 cup frozen green peas
  • 1 large or 2 small garlic clove
  • 1 Tbsp balsamic vinegar
  • 2 tsp olive oil
  • Salt & pepper
  • 2 Tbsp chopped dill or more
  • Pine nuts optional

Method

  1. Put the peas in a pan of water. Bring to the boil and cook for 3-5 minutes.
  2. Drain, but keep a small cupful of the cooking water. Rinse the peas under cold water, then put them in a small food processor.
  3. Finely chop the garlic and dill, then add these to the peas.
  4. Add the balsamic vinegar and salt & pepper to your liking. Add some pine nuts, if liked - about a small handful.
  5. Whiz until you get a smooth paste. If it’s too thick, add some of the cooking water you put aside.
  6. Taste, and season to your liking.
  7. Cool until serving.
