Green salad with lentil and goat cheese

This is a perfect, wholesome and healthy salad that is very easy to make. If  you use tinned lentils, it can be put together in just five minutes. I like the crunchiness of freshly cooked lentils, so for me it's worth the extra 20 minutes cooking time.

Ingredients
  

  • 200 g brown lentils
  • 1 bay leaf
  • 2 spring onions
  • 1 Tbsp parsley
  • 100 g cherry tomatoes
  • 50 g mixed green salad
  • 50 g soft goat cheese
  • For the dressing:
  • 1 tsp olive oil
  • 1 tsp balsamic vinegar
  • ½ tsp honey
  • 1 clove of garlic minced

Method
 

  1. Rinse the lentils, then cook with the bay leaf until tender, for about 20 minutes.
  2. Drain, rinse with cold water, then tip into a serving bowl. Remove bay leaf,
  3. Cut the tomatoes in half and chop the spring onions.
  4. Add lettuce, tomato and onion pieces. Mix well. Crumble the goat cheese over the salad.
  5. Mix the dressing and pour over the salad.
  6. Serve with wholesome bread or pita, flatbread etc. Or serve it as a starter.
