Green vegetable salad with tofu

You can make this green vegetable salad with tofu in just 10 minutes. It’s healthy, vegan, yummy and can be served with rice, on a piece of toast, quinoa or as a side dish. You can use other green too, such kale, cavolo nero, broad beans, soy beans etc.

Ingredients
  

  • 100 g Tenderstem broccoli
  • 100 g asparagus or green beans
  • 100 g green peas
  • 50 g hard tofu drained
  • For the dressing:
  • 1 clove of garlic optional
  • 1 handful basil leaves
  • 1 tbs Balsamic vinegar
  • 1 tsp olive oil
  • 1 tsp soya sauce
  • Lemon juice
  • Salt and pepper

Method
 

  1. Cut the ends off of all vegetables then put them in a steamer over boiling water. Steam them for about 5 minutes or until just tender. Transfer them to a bowl of icing cold water.
  2. Put the ingredients in a small food processor and whiz until you get a lightly textured dressing. Adjust the seasoning & vinegar, oil, lemon juice etc to your liking.
  3. Drain the vegetables and scatter them onto a platter.
  4. Pat-dry the tofu and cut it into little cubes. Scatter these on top of the vegetables.
  5. Pour over the dressing, toss gently and serve.
