Grilled corn relish

I just love grilled, barbecued or griddled corn-on-the-cob! So when corn is cheap at the market I tend to buy a lot and then grill them asap. This means I find myself filling the fridge with loads of grilled corn. The easiest way to use them up is to throw together Mexican-style salsas & salads or use them in spicy stews and chillies. This grilled corn relish has a Mediterranean flavour to it that's rather interesting. It's ready within a few minutes - an ideal condiment with grilled fish and meat or as a useful sandwich/wrap filler. Also, it's perfect for picnics and parties.

Ingredients
  

  • 1 corn on the cob grilled or griddled
  • 1 handful of cherry tomatoes
  • 1 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp chopped basil leaves
  • 1 pinch of dried chilli flakes optional
  • Salt and pepper

Method
 

  1. Let the corn cool then cut off the kernels using a sharp knife.
  2. Cut the tomatoes into small wedges. Mix the corn kernel and tomatoes in a bowl, then add the balsamic vinegar, chilli (if used) and chopped basil leaves.
  3. Season with salt and pepper to your taste. Adjust the vinegar and oil too to your liking!
  4. If you want it to have a real kick - add a finely chopped jalapeno chilli to the salad! You can also add some chopped spring onion or shallot to it, if you like!
