Grilled halloumi and peach salad

This yummy, grilled halloumi and peach salad is perfect for a light lunch or supper, particularly on warm days. You can use nectarine or apricots too - in the autumn I like making it with plums. It's ready within just 10 minutes!

Ingredients
  

  • 2 handfuls of mixed green salad
  • Few pieces of mint leaf
  • 1 Tbsp sesame seeds
  • Juice of half a lemon
  • 1 Tbsp olive oil
  • 4 slices halloumi 1cm thick
  • 2 peaches
  • 2 Tbsp honey approx.

Method
 

  1. Cut the peaches in half, remove the stones.
  2. Dry-fry the sesame seeds in a pan, set aside.
  3. Barbecue or griddle the cheese slices. Brush the peaches with honey and grill them until soft, whilst brushing with more honey.
  4. Scatter the salad leaves into a bowl. Add the sesame seeds, mint leaves, olive oil and lemon juice. Toss gently.
  5. Divide the salad onto two plates and cover each with 2 slices of cheese and 2 pieces of fruit.
  6. Serve it warm or at room temperature.
