Ingredients

  • 2 matured sirloin or rump steaks
  • 2 sprigs of rosemary
  • 2 garlic cloves minced
  • Salt and pepper
  • Butter or olive oil

Method

  1. Heat a spoonful of olive oil or a knob of butter in a large, cast iron griddle pan. Add the rosemary sprigs.
  2. When hot, add the steaks, season with salt, and cook for 30 seconds, then turn them over and cook for another 30 seconds.
  3. Then keep turning them over every minute, until they’re done to your liking.
  4. About a minute before they are ready, brush them with the minced garlic and season with pepper. Fry them for max 1 more minute-you don’t want the garlic to burn (as it will taste bitter).
  5. Rest the steak for 5 minutes (under cover) before serving.
