Halloumi, pea and spinach fritters

These halloumi, pea and spinach fritters are perfect for picnics, lunch boxes or party snacks. Or you could serve them in a burger, flatbread or with a salad. Tzatziki, hummus or tahini sauce goes really well with it.

Ingredients
  

  • 1 cup frozen peas defrosted
  • 100 g spinach
  • ½ block halloumi coarsely grated
  • 2 Tbsp parsley or mint finely chopped
  • 1 garlic clove minced
  • 1 large egg lightly beaten
  • ½ cup plain flour
  • Grated zest of1 /2 lemon
  • ½ tsp paprika
  • 1 pinch sea salt
  • ½ tsp ground peppercorn
  • Olive oil

Method
 

  1. Put the spinach in a bowl and add boiling water. When wilted, drain and rinse under cold water. Squeeze out any excess water, then chop it finely with a knife.
  2. Lightly mash the peas with a fork.
  3. Put the peas, spinach, grated halloumi, chopped parsley, beaten eggs, minced garlic, flour, lemon zest, paprika, ground pepper and salt in a bowl and mix well with your hand.
  4. Create 6 or 8 equal sized balls from the mixture and flatten them between your palms into patties.
  5. Heat some oil in a frying pan then fry the patties for 2-3 mins on each side until they are golden.
  6. Serve at room temperature.
