Cut the pepper into thin slices.
Heat the oil in a frying pan. Add the pepper and gently sauté for 5 minutes until slightly softened.
Meanwhile, whisk the eggs in a bowl with a couple of pinches of salt.
Cut the ham into small pieces.
When the pepper has softened pour over the egg mixture, let it spread out then scatter the ham over it. Using a spatula arrange the ham and pepper bits evenly.
Turn the heat down and put the lid on. Steam for 3-4 minutes until the egg is about to set on the surface. Scatter the grated cheese, put the lid on for another minute or so until the cheese starts melting.
Now sprinkle the parsley on top, season with pepper and carefully fold the omelette in half. Cook for another minute for the cheese to melt completely, then slide it onto a plate and cut it in half. Serve immediately.
