Healthy apple pancakes

A healthy breakfast can really set you up for the day! So why don’t you try these delicious, healthy apple pancakes, which are made with oats, cinnamon and sultanas? Here I used gluten-free flour and oatmeal but you can use normal wheat flour, if gluten is not an issue for you. Also, instead of sultanas, you can use other dried fruits -  such as chopped apricots, blueberries, cherries and cranberries. I served it with Greek yoghurt mixed with maple syrup, but you can serve it with a fruit compote, honey or agave syrup drizzled on top, if you like!

Ingredients
  

  • 1 green apple grated
  • 1 large egg
  • 100 g self-raising flour can be gluten-free
  • 50 g oatmeal
  • ½ tsp cinnamon
  • ½ tsp bicarbonate of soda
  • 4-5 Tbsp Greek yogurt
  • 1 Tbsp oil or melted butter
  • 1 large handful of sultanas
  • To serve: lemon zest yogurt mixed with honey or maple syrup (optional)

Method
 

  1. Mix the flour, oatmeal, cinnamon and baking soda then add the egg. Mix until combined.
  2. Add the oil, apple and enough yogurt to get a thick pancake batter. Fold in the sultanas.
  3. Oil a pancake pan or a heavy-based frying pan, then drop large spoonfuls of batter into the pan , creating circles. They should be about 5- 6cm across. Cook for 1-2 minutes on each side until golden then transfer them to a plate.
  4. Serve with you choice of topping.
