Healthy Caesar salad with tortilla chips

The traditional Caesar salad is not only full of calories but cannot be eaten by those with food allergies. This Caesar salad with tortilla chips is gluten-free, dairy-free, egg-free and can easily be vegan if walnuts are used instead of anchovies. But i’ts not suitable for nut allergies as tahini is made of sesame seeds. The salad is really yummy and healthy - ideal for summer garden parties!

Ingredients
  

  • 1 Romaine lettuce
  • 1 tbsp tahini paste
  • 25 g anchovy from oil (optional)
  • 2 small cloves of garlic chopped
  • 2 tbsp fresh lemon juice
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • Salt & pepper
  • Vegan Parmesan Cheese
  • Gluten-free tortilla chips

Method
 

  1. Gently separate the leaves from the core, then rinse and dry them with a clean tea towel.
  2. Put tahini, anchovy (if used), lemon juice, vinegar and oil in a small food processor and pulse until you get a smooth paste. Taste and adjust it to your liking.
  3. Scatter the lettuce leaves into a serving bowl, arrange the tortilla chips between them, then drizzle with the dressing. Grate some vegan cheese on top.
  4. Toss just before serving.
