Preheat the oven to 180°C and line a muffin tin with paper cases or put some silicon muffin moulds on a baking sheet.
Peel, dice and cook a large sweet potato until tender. Rinse, drain and mash with a fork and measure out half a cupful.
In a large bowl, mix the dry ingredients together. In another bowl mix the eggs, oil, applesauce and buttermilk then add the sweet potato mash.
Combine the two mixtures.
Spoon the batter into the muffin cases or silicon forms.
Bake for about 20-25 minutes until golden brown.
Transfer the muffins to a wire rack to cool.
