Place the egg, cottage cheese, protein powder, plant milk, garlic and spices in a blender.
Blend until smooth, then season with salt and pepper. Add the coriander and baking powder, then pulse again briefly until you have a thick, slightly textured batter.
Transfer the mixture to a bowl and fold in the chopped spring onions.
Let the batter rest for 5–10 minutes. It should be thick but still pourable—if it feels too thick, add a splash more milk.
Heat a non-stick frying pan over medium heat and lightly grease with oil.
Spoon small amounts of the batter into the pan to form fritters. Cook until the surface is set, then flip and cook for another couple of minutes until golden.
Repeat with the remaining batter.
Serve warm with a spoonful of yogurt and cucumber on the side, if you like.
