Homemade spiced tomato sauce

This homemade spiced tomato sauce is perfect for many dishes - such as bolognaise sauce, meatballs, chilli con carne, curries and so on. It’s much more tasty than any ready-made, shop-bought versions. This portion is enough for about 2 meals for 4 people.

Ingredients
  

  • 3 shallot onions chopped
  • 2 cloves garlic chopped
  • 3 Tbsp olive oil
  • 2 tins peeled plum tomatoes each 400gr
  • 2 teaspoons red wine vinegar
  • 1 Tbsp sugar
  • ½ tsp ground cinnamon
  • ½ tsp chilli flakes optional
  • 3 Tbsp chopped parsley

Method
 

  1. Heat the oil in a pan, then gently sauté the shallot and garlic until soft.
  2. Add the tomatoes, cut them up with a wooden spoon, then cook for 15 minutes, stirring occasionally.
  3. Take it off the heat, add the parsley and purée it with a hand-held mixer.
  4. Add the sugar, vinegar, cinnamon, chilli (if used) and cook at a low temperature for 25 minutes, under a lid. If needed, add some water. It should be thick, but still liquid.
  5. Taste, and season it to your liking.
  6. You can use it immediately or let it cool and transfer it into jars (to be kept in the fridge) or plastic containers (for the freezer).
