Honey-sesame baked tofu and green beans

This honey-sesame baked tofu and green beans is perfect for vegans, vegetarians and the health-conscious. It’s ideal for lunch or light supper, served with brown rice, quinoa or noodles - alternatively serve it as a side dish or as a cold salad at a picnic/party.

Ingredients
  

  • 300 g extra-firm tofu
  • 2 Tbsp tamari soy sauce
  • 2 cloves garlic minced
  • 1 Tbsp honey
  • 1 tsp grated fresh ginger
  • 1 tsp sesame seeds
  • 2 tsp toasted sesame oil
  • ½ tsp chilli flakes or 1 chilli pepper chopped
  • 200 g trimmed green beans
  • To serve: Sesame seeds and one spring onion sliced

Method
 

  1. Drain the tofu and dry it with paper towels. Cut the tofu into cubes or strips. Put them in a shallow dish.
  2. Whisk the soy sauce, garlic, honey, ginger, sesame oil & seeds together in a large bowl. Add the chilli flakes or chopped fresh chilli. Combine.
  3. Drizzle the tofu with the mixture.
  4. Turn the oven on, set to 190°C.
  5. Lightly oil a non-stick baking tray. Place the marinated tofu on the baking tray. Bake until golden-brown on the bottom, for about 10 minutes. Meanwhile add the beans to the marinade.
  6. Flip the tofu and the scatter the green beans between the tofu pieces. Season with salt and pepper and pour over any remaining marinade.
  7. Bake for a further 10-15 minutes until the tofu is golden-brown on each side - so you’ll need to turn over the pieces once or twice more.
  8. Sprinkle with some sesame seeds and sliced spring onion and serve.
