Indian-style baby potato roast

Indian-style baby potato roast is an ultimate comfort food and very simple to make. It is very delicious and flavorful. It is my mom’s recipe. She always makes it for me with a combination of garlic-tamarind soup and steamed rice. Potatoes are an easy way to increase the nutrients and fiber in your diet.

Ingredients
  

  • 15 baby potatoes
  • 1 tsp ginger garlic paste
  • 2 tsp red chilli powder
  • ¼ tsp turmeric powder
  • ½ tsp fennel powder
  • Pinch of asafetida
  • ½ tsp cumin powder
  • ½ tsp coriander powder
  • 2 Tbsp oil
  • 2 big onions finely chopped
  • 1 spring curry leaves
  • Salt to taste
  • For masala:
  • 1 ” cinnamon stick
  • 3 cardamoms
  • 3 cloves

Method
 

  1. Wash the baby potatoes and pressure cook them by adding two cups of water and little salt. Cook for 3 whistles. Peel the skin off. Take a fork and poke the potatoes gently. Keep aside.
  2. Heat the oil in a pan over a medium flame. Add curry leaves, cumin seeds and the cooked potatoes. Sprinkle salted water and fry them on a low flame for 7-8 minutes.
  3. Add chopped onions, ginger garlic paste and fry for another 10 minutes.
  4. Add fennel,cumin,coriander,turmeric and chilli powders and sauté them well.
  5. Lastly add the powdered spices and mix well.
  6. Remove from the flame and transfer to a serving bowl. Serve hot with steamed rice or rotis.
