Italian salmon and potato stew

This Italian salmon and potato stew is perfect for  a midweek family supper. It’s ready within 25 minutes, it’s healthy and filling. Serve it with a crispy salad on the side.

Ingredients
  

  • 4 salmon steaks
  • 4 potatoes
  • 1 celery stick
  • 1 carrot
  • 1 red onion
  • 2 cloves of garlic
  • 1 small chilli optional
  • ½ red pepper
  • 1 Tbsp tomato pure
  • 1 tsp Italian herb mixture
  • 1 bay leaf
  • 1 paprika & sundried tomato stock pot
  • 1 cup chopped cavolo nero

Method
 

  1. Peel the potatoes and cut them into bite-sized bits.
  2. Finely chop the carrot, celery, onion, chilli, red pepper and garlic.
  3. Heat some olive oil in a large pan and sauté the chopped vegetables until tender, then the add the tomato purée and herbs.
  4. Stir for a minute, the add the potatoes. Add some water, enough to cover everything well and add the stock pot and bay leaf.
  5. Bring to the boil and cook for 15 minutes or until the potatoes are tender and you have a nice, thick sauce.
  6. Meanwhile cut the fish into small chunks (you can remove the skin, if preferred).
  7. Add the cavolo nero to the stew, then place the salmon pieces on top.
  8. Season with salt and pepper, then put a lid on and steam for 3-5 minutes.
  9. Carefully stir through, then serve.
