Jackfruit and black bean burger

This Jackfruit and black bean burger is a vegan,  gluten-free, healthy version. Serve the patties in tortilla wraps, burger buns or flat bread , using condiments, salads and toppings of your choice. I served them in gluten-free buns with grilled vegetables.

Ingredients
  

  • 1 tin jackfruit drained
  • 1 tin cannellini beans drained
  • 1 onion
  • 2 cloves of garlic
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 pinch chilli flakes optional
  • 1 Tbsp tomato purée
  • 2 Tbsp chopped parsley or mint
  • 2 cloves of garlic
  • 2 Tbsp Chickpea flour
  • Oil spray

Method
 

  1. Drain the jackfruit and beans and rest them in the strainer over the sink or a bowl.
  2. Finely chop the onion and garlic.
  3. Heat the oil a saucepan and gently sauté the onion and garlic until soft. Add the spices and chilli flakes, stir for a few seconds and add the tomato purée. Stir again for a few seconds, then turn off the heat.
  4. Transfer the beans and jackfruit into a mixing bowl. Using a potato masher and fork, mash them until you get a textured mixture. Season with salt and pepper, then add the cooled tomato & onion paste.
  5. If you have time, rest for about 30 minutes. If the mixture is too soft, add more chickpea flour.
  6. Make 8 balls from the mixture, then flatten them slightly between your palms. Put them on a baking tray lined with parchment paper. Spray them with some oil and bake/grill in a preheated oven for ten minutes on both sides or until golden.
  7. Alternatively, heat some oil in a frying pan and fry them for approx. 3- 5 minutes on both sides until golden. Serve them in a bun or flatbread with condiments of your choice.
