Kerala banana chips

This is a popular snack from the state of Kerala which is in southern part of India. The chips are made from raw banana and are very crispy and delicious. These are usually made by frying in coconut oil.

Ingredients
  

  • 3 plantains cooking bananas
  • 1 tsp salt
  • ¼ tsp turmeric powder
  • Coconut oil for deep frying
  • ¼ cup water

Method
 

  1. Peel the skin of banana and keep ready.
  2. Take water in a bowl, mix turmeric powder and salt.
  3. Heat oil in a deep bottomed pan.
  4. Take a slicer and slice raw banana over the oil directly keeping the flame medium.
  5. Fry till it turns slightly golden, sprinkle the turmeric mixture little by little as needed for each batch.
  6. You need to be very careful at this stage as the oil will start to splutter. You will hear a sizzling sound.
  7. The chips will be ready when the sizzling sound stops.
  8. Remove the chips from oil and drain them on a paper towel.
  9. Cool and store in an airtight container.
